Food for Thought: Sakura Sushi and Grill

KNOXVILLE, Tennessee (WATE) — Nearly a dozen violations have been prosecuted at a grill serving Japanese food in Maryville.

The grade is 67 At Sakura Sushi and Grill at 741 Watkins Road in Maryville. This is a failing score. A grade of 69 or below is considered a fail.

The inspector wrote that there was raw shrimp placed on top of the whole zucchini. On the shelf below, the same zucchini was touching raw chicken. This is not allowed in restaurants. Raw foods contain a lot of bacteria, which creates the potential for cross-contamination when stored over ready-to-eat foods. Raw food was moved to another shelf.

Inspectors found the utensils washed in a hand sink, where they were rinsed with water and placed back on the grill. The utensils are to be washed in the dishwasher.

We have others, too. No date marks were found on some instant foods. Date of first use is required to guarantee freshness.

Inspectors found the frozen salmon thawed at room temperature. Frozen food in restaurants is supposed to be thawed in the refrigerator to slow the growth of bacteria.

Finally, the person in charge did not show any administrative control as there were a number of serious violations that could have caused food poisoning.

The inspector returned to Sakura Sushi and Grill in Maryville. A major violation was corrected during follow-up, resulting in a new score of 91.

Knoxville’s Hibachi Grill and Supreme Buffet received a failing score of 60 last week. When the inspector retested him for follow-up, he had a new score of 84.
