For some people, dessert is the best part of the meal. Sometimes that means pie is involved.
Of course, we also have favorites like Hoosier Mama Pie Company, Spinning J and Bang Bang Pie. But after a recent visit to Edgewater, I realized there are more pie shops worth shouting about. Started in Milwaukee but moved here a few years ago.
After burgers and beers at Edgewater’s Beard and Belly, you might have room for dessert. Honey Pie is here for you. The bar and restaurant owner loved the Milwaukee-based pie shop so much he reached out.
“We decided to partner to bring Honey Pie’s pie to Chicago, so we opened a restaurant and bakery in two locations,” said co-owner Andrew Barbera.
“We make fresh cream pies and fruit pies every day. We also have treats like salty chocolate brownies and chocolate chip cookies.”
A stand mixer gets a workout in whipping heavy cream into a light and airy topping for many creations. The key lime is popular, but the light chocolate cream is also popular.
“Our pies are kind of modeled after old-school housewives pies from the 1950s and 1960s, and they’re pretty simple. The graham cracker crust for cream pies crumbles when you cut them.” , with a layer of custard cream and fresh whipped cream on top,” he said.
They sometimes tuck the envelope in unique takes like lemon chiffon, instead using Meyer lemons for both the filling and topping.
Fruit pie, on the other hand, takes a different approach. Here, strawberries, raspberries, and blueberries are the stars, and below…
“Really simple, just butter dough, classic pie crust, crispy and delicious,” said Barbera.
Meanwhile, on top: brown sugar, flour, oats, cinnamon.
“We top it with a sweet, simple streusel and crumble on top of it,” he said.
Barbera says big pie events tend to happen later in the year, on Thanksgiving, of course, but also on Mother’s Day. That’s why it’s never too early to think about what kind of dessert to eat.
“Anytime is a good time to eat pie,” said Barbera.
